Dinner tonight

I made chicken roasted on eggplants and tomatoes from Donna Hay's The Instant Cook served with roasted courgette and couscous. It was alright, probably won't make it again though....didn't taste as yummy as I'd like and looked nowhere near like the picture in the book (hate that). Perfect weather for it - raining and cold outside.

This afternoon I also made Blueberry Buttermilk Muffins, which is a great recipe and the muffins are divine. One of my favourites, this one. It's actually called Mixed Berry Buttermilk Muffins, but I often use all blueberries.

Robyn - I have this & other Donna Hay cookbooks, have a couple of faves in the Intstant Cook - I will have to email you!

She also writes an annual kids cooking magazine, have you seen these? They're great, stuff you can make with the girls.

I would love to know your faves from the Instant Cook, Ange! My favourite Donna Hay cookbook is Modern Classics Book 2...gotta love a cookbook full of baking recipes.

Mum has bought me Donna Hay magazine The Kids Issue (she's sending it soon). Is this the same one you mentioned?

Yes - thats the mag I mean. Also have that DH baking one too - our fav cake from that is the chocolate truffle cake pg 82 - very decadent.

DH instant cook - try the soup red lentil carrot and cumin, the pasta penne with wilted rocket and proscuitto, steak with rocket sauce and also the polenta bit from the honey roast veges on pepper polenta.
