Watermelon Jam
I made the Watermelon Jam the other night...and it didn't turn out. All it is is watermelon, sugar and vanilla beans (scraped). Simmer for 1.5 hours and voila. I cooked it longer than this and it was still watery (the recipe said it should be syrupy). I didn't want to keep cooking it, so I jarred it up. And the next morning it was still watery. Seven jars of watery watermelon.
Today I tipped all the jars back into a saucepan and continued to simmer. And it looks like it has worked this time. Definitely looks more syrupy and less watery. I haven't put it in jars yet but I know it will be less than seven*.
So if you are making the Watermelon Jam from this month's delicous. magazine you might need to boil the crap out of it. One and half hours is not even the beginning. Either that or we have particularly watery watermelons...
*Updated later in the evening - I put the jam back on to warm again before putting it into jars... and it burnt. I have had no luck with this freakin' jam. It only caught a bit so I'm hoping the taste won't be too affected. Won't matter much as the grand total was a whopping three jars. Sooooo, no Watermelon Jam for gifts then.
