On the menu today
For lunch I made Chickpea with chorizo and silverbeet (Super Food Ideas, June 2005) - the chorizo was the tastiest bit. For dinner the girls and I (MK at work) had vegie pizzas. I pan-fried courgette, red pepper and mushrooms (all chopped fairly small) in olive oil. Put some passata (tomato sauce...sugo?) on three small pita breads, then spread some vegies on. Topped it all with grated cheese and baked in a hot oven for about 10mins. Served with mixed lettuce and WW French dressing.
Lily never really ate lettuce when she was small. She'd take a piece and chew and chew and chew and eventually spit it out. Charlotte, on the other hand, has taken to eating the lettuce from my salad plate whenever I eat healthy for lunch. She demolishes the stuff. And now Lily can get beyond chewing it to actually swallowing. It seems a bit of a favourite for both of them.
Tonight Lily ate all her vegie pizza and salad. Then ate 4 weetabix with milk one after another. Granted she didn't have much for afternoon tea (a few mini smarties bought home from school) but that was a lot for her...or anyone!
