Not half stressful
I'll be glad when this big order is picked up in three hours...not that I'm counting or anything.
It started last night when I baked the cookies. I had had to use a higher percentage cocoa dark chocolate than I normally use. I had run out of my regular dark chocolate and my supplier (aka MK) can't get me any till Monday. So I used 72% dark chocolate that I use for the Mud Cake. But the butter separated from the mix. I thought putting the dough in the fridge might help. But when I pulled the cookies out of the oven they were swimming in a pool of melted butter.
I have no idea where else to buy this chocolate to re-make the cookies so I tried our local service station (you just never know) but no luck. So I dragged the girls into town with me this morning on a chocolate hunt (more stressful than fun, I can tell you). We had no luck at Globus or Manor so I bought chocolate I could have bought here and got back on the bus. Where Charlotte screamed all the way home, wanting to get out of the pram. Thankfully it's only a 10 minute trip but it felt muuuuuuch longer.
I have just made the cookie mix with the new chocolate and I'll put them in the oven soon.
Then this morning when I made the Cream Cheese Frosting for the Hummingbird Cake it was too runny. You can't get blocks of Philly Cream Cheese here, just tubs (for spreading). And I think that's the problem. So I have spent the rest of my time salvaging a huge cake with runny frosting, making new frosting and trying to get it looking perfect.
I finished the Apricot and Cocount Balls last night. I frosted the Mud Cake this morning.
Charlotte is crabby but I'll put her to bed soon. Thankfully she slept all night last night.
And the apartment looks like a bomb has hit it.
I will be taking a baking break after this order...till the next order!
